Beth's Amazing Stuffed Bell Peppers


Had fun looking at videos for stuffed bell peppers! I took good points from them and made my own recipe. :)

Ingredients:
6 green bell peppers
1 cup long grain rice
3 tbs. olive oil
1 lb. lean ground beef
1/2 diced onion
2 cloves minced garlic
1 celery stock (diced)
2 carrots peeled and diced
1 large fresh tomato (diced)
1 can stewed tomatoes (chop in food processor)
1/4 cup ketchup
1 tbs. brown sugar
1 tbs. Worcestershire sauce
1 cup shredded cheddar cheese
1/4 cup parmesan cheese
seasonings: salt, pepper, Italian dried seasoning, paprika, garlic and onion powder

Pre-heat oven 375 degrees

Recipe:
Rice
Cook 1 cup of rice with 2 cups of water covered about 20 min. ( I used a rice steamer)

Bell Peppers
 
Cut tops off peppers. Clean out seeds and membranes. Rinse
In a large pot fill 3/4 full of water. Bring water to a boil. Add peppers to water and boil for 6 min. Set aside and drain on a clean towel.


Sautéed Vegetables

In 2 tbs. olive oil sauté, celery, carrots, onion, garlic, with a dash of salt and pepper, until tender. (about 8 to 10 min.) Set aside on a paper plate.

Ground Beef

In 1 tbsp. of olive oil, brown ground beef, with a dash of all seasonings above.
After meat is fully cooked, add diced fresh tomato, sauté for a few min.
Take off heat and mix together with sautéed vegetables. Set aside

Sauce

In large bowl stir together chopped stewed tomatoes, ketchup, brown sugar, and Worcestershire sauce. Set aside

Stuffing mixture

In a large bowl mix together- steamed rice, browned meat mixture with sautéed vegetables, 1/2 of sauce, cheddar, and parmesan cheese. Set aside

In the bottom of baking dish add a little sauce plus 1/3 cup water.
Put cooked bell peppers in baking dish and fill peppers with stuffing mixture.


Top with a spoon of sauce and sprinkle of parmesan cheese.


Bake 375 uncovered for 30 min.
Crazy yummy!!

Asian Pork with Roasted Vegetables

Ingredients:
1 lb. teriyaki flavored pork loin
1/2 chopped head of cauliflower
4 chopped broccoli crowns
1/2 head of chopped cabbage
7 button mushrooms cut in half
1 med. chopped onion
1 1/2 cups of steamed white long grain rice
1 bottle of sweet and sour sauce
season salt, pepper, garlic, and onion powder
oil
water





Pre heat oven at 400 degrees.
In a large bowl, put in all vegetables; add 2 tbs. of oil and a dash of season salt, pepper, garlic and onion powder. Toss well. Spray a cookie sheet with non stick spray and put vegetables on cookie sheet. 
Bake for 20 to 25 minutes. Then set aside. 



Rinse pork, then cut into bite size pieces. Add to pork 1 tbs. soy sauce and 1 tbs. of oil; and a dash of pepper, garlic, and onion powder.
In a cast iron skillet add 1 tbs. oil. Cook meat on med. heat, until moisture is gone and browns. Add sweet and sour sauce to meat. In the sweet and sour bottle, fill 1/2 full with water; shake then add to pork. Let pork simmer for 10 minutes.



Mix together well all cooked ingredients. Eat and enjoy! So yummy!!

Cheese Enchiladas, Spanish Baked Rice, and Flavorful Pinto Beans


 
Cheese Enchiladas
Ingredients:
3tbs. oil
2 tbs. flour
1 cup water
1 beef bullion cube
10 oz. can enchilada sauce
1/2 diced onion
1 cup chopped black olives (optional)
4 oz. can chopped green chilies (optional)
12 corn tortillas
8 oz. Fiesta blend cheese
Sour cream
oil
Recipe:
In a pot; simmer, 3 tbs. oil ; then add flour and stir well
Add bullion and water: Stir and boil, until thickened
Add enchilada sauce; stir well and set aside
In a separate frying pan, heat up 1/3 cup oil on medium high heat; then drop in corn tortillas, for a few minutes on each side; then drain on paper towels.
Dip each cooked, corn tortilla in enchilada sauce

Then top with onion, cheese, olives, and green chillies (reserve some cheese to put on top)

Place in 9 by 13 baking dish; then roll up; top with the rest of sauce, and  with the rest of cheese :)
Bake 350* for 25 minutes
After baked top with a dab of sour cream.



Baked Spanish Rice
1 cup long grain white rice
2 cups water
1 beef bullion cube
2 tbs. oil
1 tbs. butter
dash cumin, paprika, parsley, chili, garlic, and onion powder
Recipe:
First put rice in a oven proof dish
In a separate small pot; bring all other ingredients to a boil; then pour over rice; cover and bake 350* for 35 min.


Flavorful Pinto Beans
1 can pinto beans (drained) you can add 2 cans for a bigger crowd
1 cup water
1 beef bullion cube
1/4 diced onion
1/2 diced tomato
 dash cumin, paprika, parsley, chili, garlic, and onion powder
In a pot simmer all together for 10 minutes.
SO Yummmy!!

Baked White Rice with Mushrooms

Ingredients:
2 cups long grain white rice
3 1/2 cups boiling water
3 chicken bullion cubes
3 tbsp. olive oil
1 tbsp. dried parsley
1 tsp. garlic and onion powder
2 tbsp. butter
5 thinly sliced button mushrooms (optional)

Recipe:
In an oven proof dish add uncooked  rice; set aside.
On the stove in a medium sauce pan, boil water, then add other ingredients. Stir.
Pour hot liquid over rice.  Stir.
Cover tightly with aluminum foil or a casserole lid.
Bake the rice at 350º F for about 35 minutes.
Fluff the rice with a fork prior to serving.

Beth's Easy Jambalaya

Ingredients:

14 oz smoked sausage (cut in angle, 1 inch sections)
12 oz bag of cooked small frozen shrimp (defrosted, drained and rinsed)
1/2 onion (sliced)
1/4 cup diced celery
2 cloves crushed garlic
1 cup long grain white rice (use only 3/4 cup for more wet Jambalaya)
1 can stewed tomatoes (chopped)
1/4 cup rotel tomatoes
1 chicken bullion cube
1 1/4 cup water
2 tbs. olive oil
1 tbs. butter
1/2 tsp. Italian seasoning
1/2 tsp. Cajun seasoning 
dash of salt and pepper 
1/4 tsp. cayenne pepper (optional)

Recipe:
In a pot add oil and butter. Saute onion, sausage, celery, and fresh garlic for a few minutes. Then add all seasoning saute for a minute. Add rice and saute for a few minutes. Add bullion cube, water, stewed and rotel tomatoes. Stir
Cover and simmer on low for 25 to 30 minutes.
Take off heat and add shrimp. Stir
Cover and let set for 15 minutes.
Eat and Enjoy!!  So tasty!

Beth's Baked White Rice with Vegetables

Ingredients:

2 cups long grain white rice
3 1/2 cups boiling water
2 chicken bullion cubes
3 tbsp. olive oil
1 tbsp. dried parsley
1 tsp. garlic and onion powder
2 tbsp. butter
3 carrots peeled and diced
3 celery stalks, diced
1/2 diced onion
dash salt and pepper

Recipe:
Saute vegetables for a few minutes, in 1 tbsp. olive oil and a dash of salt and pepper. Then set aside.


Then, brown rice for a few minutes on med. heat, in 2 tbsp. olive oil.



On the stove in a medium sauce pan, boil water, then add butter, bullion cubes and seasonings. Stir until bullion is dissolved.

In an oven proof dish add saute vegetables and browned  rice.
Pour hot liquid over rice.  Stir.
Cover tightly with aluminum foil or a casserole lid.
Bake the rice at 350º F for 35 minutes.
Set on counter for 10 to 15 minutes.
Before serving fluff with a fork. Eat and enjoy :)

Seasoned Baked Brown Rice


Don't stand over the stove, just bake your rice! This is so good!

Ingredients:
1 1/2 cups brown rice, medium or short grain
2 1/2 cups chicken broth or water
1 tablespoon butter
1 tbs. dried parsley flakes
Dash of salt, pepper, onion and garlic powder

Directions:

Preheat the oven to 375 degrees F.

Place the rice into an 8-inch square glass baking dish.

Bring the broth, butter, and seasonings to a boil in a saucepan. Once it boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.

After 1 hour, remove cover and fluff the rice with a fork. Then eat!! 
I made it with roasted brussel sprouts and baked flounder. This was such a great meal!! So healthy and yummy!!

Pork Fried Rice

                                       This is so good!


Ingredients:
1 lb. marinated pork (chopped in small pieces)
3 cups steamed rice
3 scrambled eggs
1 cup frozen peas
4 chopped scallions
4 tbs. oil

Pork marinate: (marinate pork for 2 hours or over night)
3 tbs. lite low salt soy sauce
2 tbs. Italian dressing (I used out of a jar)
2 tbs. lemon juice
1tbs. grated fresh ginger
2 crushed garlic cloves
1 tbs of hot sauce
1 tbs.honey

                                         Marinate meat
Steam rice. I have a rice steamer. It is a easy way to cook rice!


Stir fry meat and 2 tbs. oil in skillet and cook well until all moisture is gone and it browns and set aside.


Defrost peas in hot water and set aside.


Scramble eggs in separate skillet and set aside.


Chop scallions finely.


Stir fry steamed rice for a few minutes in 2 tbs. oil and in the pan juices from the meat you cooked.


Then put all ingredients together and stir fry together for a few minutes.



Eat and enjoy!! Have with some egg rolls!

Fried Rice

Homemade Fried Rice

Ingredients:

1/2 pound chopped pork or any meat (optional) 

2 tbs. soy sauce 

1 tbs. minced garlic

1 tbs. ginger

1 diced carrot (optional)

1 1/2 cups steamed white or brown rice

1 cup of frozen peas

3 eggs

2 tbs. of oil

3 chopped scallions

1 package of fried rice season mix

 

Marinate meat (meat optional) of your choice in  soy sauce minced garlic, and ginger, for about an hour.  

Steam rice. (set aside) 

Soak frozen peas, in hot water to defrost. (set aside)

Scramble eggs.  (set aside)

In a separate skillet saute meat and cook until browned well, and fully cooked. About half way through cooking the meat, add carrot. (set aside) 

 


 

On medium-high, get a large non-stick skillet or wok hot.  

Put oil in the large skillet.   

Follow package directions of fried rice season mix. (Find packet in Asian isle in supermarket)

Toss meat, eggs and peas in fried rice

Add scallions last

Stir fry all ingredients together for a few minutes.  Eat It Up !!

Chicken Vegetable Rice Soup

Hearty and Satisfying!!


 1  rotisserie chicken carcus; leave some meat on it

 Dice 2 stalks of celery

 thinly slice 3 carrots

1/2 med. onion

1 cup fresh green beans

3 cloves crushed garlic

1 lg. bullion cube

a small bunch of fresh parsley

1 cup shredded cabbage

1 can chopped stewed tomatoes

1 sliced lemon

2 teas. dried Italian seasoning

1 teas. Mrs. dash seasoning

2 teas. salt and pepper

Fill pot 1/2  full with water. After simmering  for 30 min. Take out carcass and shred off chicken(set aside).

Then add 1/2 cup rice or 3 peeled diced potatoes; simmer in soup for another 20 min. Then add chicken.


Instead of throwing away your rotisserie chicken left overs: freeze your chicken and use it for soup!

So so yummy!!  I had it with buttered crackers

Beth's Yellow Rice



This is my recipe for a great rice side dish that goes with any meal, and  good on its own!

First saute for a few minutes, 1/2 of a diced large onion, 1 large diced carrot, and 1 diced stalk of celery in 3 tbs. oil.  Add a dash of salt and pepper.

Then add and brown 1 1/2 cups long grain rice.

Add1 tsp. turmeric, 1 large chicken bullion cube, and 1 tbs. parsley. Sauté for a few minutes.


Then add 3 1/2 cups of hot water. Simmer covered for 20 minutes.  Set off  heat for 5 to 10 minutes.

Eat with a meal or by itself. I like it with a dash of Teriyaki sauce.

Pan Seared Pork Chops

Spanish Rice

Ingredients:  1 1/4 cup White long grain rice

1/4 diced onion 

1 clove crushed garlic

1 large chicken bullion cube

1 tsp paprika and cumin

2 tbs.butter and oil

 

In large skillet, brown on (med. heat) rice in oil and butter.

 

Add  diced onion, clove crushed garlic, 1 teas. paprika (makes it red) and cumin.  Saute few min.

 

Add 1 lg. bullion cube (can used beef) and 2 1/2 cups water.

 

Bring to a simmer and cover for 20 to 25 min. Then set off burner for 5  minutes, then fluff with fork.

 

Serve with any of your favorite Mexican food!
