Ingredients:
6 russet potatoes, boiled until tender, peeled, and sliced. Put warm potatoes in a large bowl.
8 slice's of thin bacon, cook until crisp, then chop. (save 1/4 cup of bacon grease)
1 apple pealed and diced
3 celery stalks, diced
1/2 med. onion, diced
dash of celery seed
1/4 cup chopped parsley
Mix together and set aside
1/4 cup water
1/3 cup white vinegar
1 tbs. sugar
Recipe:
Sauté apple, celery, onion, and celery seed in 1/4 cup of bacon grease for 3 min.
Then add vinegar mixture, simmer for 3 min.
Pour over potatoes and toss together.
Toss in crumbled crisp bacon
Top with chopped fresh parsley
Eat and enjoy!! So yummy!

BLT Time!
Bake your bacon!
This is so much easier than frying it in a pan! My daughter in law Jari did this when I came to visit. Now I do it. This is a time saver! Thank you sweet Jari!
Bake in oven at 425* (can bake at 400* for less crispy bacon)
Put 1 package bacon on a cookie sheet lined with foil (I use low sodium bacon)
Put on middle rack
Bake for 22 to 27 minutes
Turn bacon over half way through time
Some of the bacon on edge of baking sheet might get done faster.
Drain on paper towels
So yummy!
Wheat toast, bacon, lettuce, sliced tomato, sliced onion (optional), mayo.

Triple Stacked BLT
Nothing much better to eat than a BLT!!
My son Jonathan made this one, with lots of bacon!!!!!
What you need:
3 slices of bread of you choice, toasted.
On bread, put on lots of mayo or salad dressing (miracle whip)
Layer with lettuce, tomato, and lots of bacon
So so GOOD!!
He put in a few pickles and jalapenos, for a kick.
Tip: Cook bacon all at once in oven.
Line cookie sheet with foil. In a single layer, put on cookie sheet. Bake 400 to 425 degrees for 20 to 30 minutes.
Directions are on back of bacon package.
