Chicken Vegetable Rice Soup

Hearty and Satisfying!!


 1  rotisserie chicken carcus; leave some meat on it

 Dice 2 stalks of celery

 thinly slice 3 carrots

1/2 med. onion

1 cup fresh green beans

3 cloves crushed garlic

1 lg. bullion cube

a small bunch of fresh parsley

1 cup shredded cabbage

1 can chopped stewed tomatoes

1 sliced lemon

2 teas. dried Italian seasoning

1 teas. Mrs. dash seasoning

2 teas. salt and pepper

Fill pot 1/2  full with water. After simmering  for 30 min. Take out carcass and shred off chicken(set aside).

Then add 1/2 cup rice or 3 peeled diced potatoes; simmer in soup for another 20 min. Then add chicken.


Instead of throwing away your rotisserie chicken left overs: freeze your chicken and use it for soup!

So so yummy!!  I had it with buttered crackers
