Pineapple Zuccini Bread

My twist on it!  It has crushed pineapple.

This is Super Moist!!

Preheat oven 350

Ingredients:

Grate 1 med. zucchini and 1 med. yellow squash, (about 2 cups)

(I took the large seeds out of the yellow squash)

1 teas. lime juice

In a separate bowl combine 4 large eggs

1 1/2 cup sugar

1 cup oil

1 teas. vanilla

1 8 oz. can crushed pineapple with it's juice


Mix together in separate bowl 3 1/4 cups unbleached flour

1 1/2 teas. baking soda

1 teas. salt

1 1/2 teas. pumpkin pie spice

Blend half flour with wet mixture, then add rest and blend together.

I used 12 mini loaf pans, sprayed with non stick spray

Check bread after 30 min. Done when tooth pick comes out clean.

Use any loaf or cake pan  (just check on it can take up to 45 min.)

After done cover lightly with foil and let cool for 20 min. (this makes it even more moist!) We all like moist!!

It even tastes better the next day!  If it is not all gone!

Strawberry Cream Cheese Spread

Make it yourself you save money and have ingredients left over for other things!

Ingredients:

4 oz. low fat cream cheese

2 tbs. natural strawberry spread

1 tbs. softened salted butter

Blend in mini food processor; then refrigerate

When bread cools, spread on bread and enjoy!!
