Grilled Beef and Chicken Fajitas

It is St. Patrick's Day 2015!  I only had $15 dollars. We were going to eat out, and my son Jon said "NO"! He had a flavor plan.
I had one frozen chicken breast, lettuce, tomato, lime, a few tortillas, scallions, radishes, fresh garlic, 1 bell pepper, and one onion in the refrigerator. 
He left with the money. He found a $6 marinated flank steak,  2 fresh jalapenos, shredded cheese, and some beer.
We had such an amazing meal!!


Salsa- 2 tomatoes ( finely diced), 1 scallion (finely diced), 1/2 juice of a lime, 1/2  jalapeno ( finely diced), dash of sea salt.






Season meat liberally with fajita seasoning. Brush vegetables with oil, salt and pepper.


Grill it!!






Before you eat, lightly brush oil on tortillas, and grill for a few minutes on each side.



We were happy campers!!
