Vegetable Beef Tomato Sauce


This is so delicious with tons of flavor!
Great to eat on your favorite pasta or just by itself. Can use no meat to make it vegetarian.
Ingredients:
Chop up:
1 carrot
1 bell pepper
1 small zucchini
5 button mushrooms
1/2 med onion
1 clove garlic
Sprinkle with salt, pepper, and Italian seasoning.
Add 1/2 lb. ground lean hamburger. (optional)
Saute in olive oil and a dab of butter, until meat is cooked and vegetables are tender.
Add 3/4 can of stewed tomatoes. (chop up tomatoes in food processor)
Simmer for a few minutes.
Eat and enjoy!
