This is so delicious with tons of flavor!
Great to eat on your favorite pasta or just by itself. Can use no meat to make it vegetarian.Ingredients:
Chop up:
1 carrot
1 bell pepper
1 small zucchini
5 button mushrooms
1/2 med onion
1 clove garlic
Sprinkle with salt, pepper, and Italian seasoning.
Add 1/2 lb. ground lean hamburger. (optional)
Saute in olive oil and a dab of butter, until meat is cooked and vegetables are tender.
Add 3/4 can of stewed tomatoes. (chop up tomatoes in food processor)
Simmer for a few minutes.
Eat and enjoy!
