Ham Veggie Omelet
So Flavorful!!
Ingredients:
2 eggs (whisked in a bowl with 2 tbs. hot sauce of your choice)
2 cut up pieces of deli ham (optional)
1/2 sliced bell pepper; I peel outer skin with potato peeler (optional)
5 sliced fresh mushrooms
3 scallions, sliced
2 tbs. chopped fresh parsley
2 tbs oil and butter
dash of salt, pepper, garlic and onion powder
Recipe:
In a small non stick pan on medium heat, add 1 tbs. oil and butter. Saute for a 3 minutes the ham, bell pepper, mushrooms, scallions, parsley, and seasonings. Set it aside. (leave some veggies in the pan to put on top :)
On medium/low heat, coat a medium size pan with 1 tbs. butter and oil. Pour in egg mixture. Cook eggs 3/4 way. Tilt pan back and forth to bring un-cooked egg to edges of pan. Place cooked veggie mixture in center of eggs; then fold omelet in half with spatula. Cook omelet for 1 minute on one side then FLIP :) with spatula. Cook other side for another minute. Put on a plate and top with extra saved vegetables.
