Pork Roast with Summer Plums

Ingredients:
2 1/2 to 3 lb. Pork Roast
4 peeled and sliced carrots
3 sliced summer red plums
2 tbs. oil
salt, pepper, paprika, onion and garlic powder
1/2 cup water
3 beef bullion cubes
1 tbs. dried parsley
2 tbs. corn starch
mash potatoes


Recipe:
Put sliced carrots and plums in a crock pot and sprinkle with salt and pepper.


In frying pan add oil and get hot on med. heat. On roast, sprinkle all sides with seasonings; except parsley. Brown all sides, then put in crock pot over carrots and plums.


In a microwave safe bowl add water and bullion cubes. Heat for 1 minute, and stir until bullion is dissolved. Then poor over browned roast in crock pot.
Cook in crock pot on high for 5 hours.
After 5 hours take out roast, carrots, and plums out of crock pot; put on a platter and cover. 

The BEST Garvy : 
Pour crock pot drippings and parsley into a sauce pan. On stove top bring drippings to a boil.
In a separate small bowl, put in water and then add corn starch and mix well, with a fork.
Then slowly add corn starch mixture, to boiling broth and stir. It will thicken. Take off heat and wait to serve on roast and potatoes. 
I was going to steam some broccoli but I had enough carrots, so I didn't. 
My husband and father-in-law loved it!!
