Beef Minestrone Soup

Ingredients:

1 1/2 lb. beef stew meat

1/2 chopped  onion

3 cloves diced garlic

1/2 lemon

3 peeled; chopped carrots

1 stalks diced celery

1 can chopped stewed tomatoes

3 beef bullion cubes

1 tbsp. Italian seasoning

1 tbsp. Mrs. dash and dried parsley

2 teas. black pepper

1 cup fresh green beans, 1 cup broccoli, and 1 cup corn

1 sliced zucchini

3 peeled chopped potatoes

Water

 

Recipe:

Brown stew meat in 2 tbsp. oil

Add onions & garlic, saute for a few minutes.

Then add seasonings, beef bullion cubes, and lemon.

Add water to cover.  Simmer 30 to 40 minutes. Until meat is tender.

Then add carrots, celery, green beans, and stewed tomatoes. Simmer 10 minutes.

Then add potatoes, zucchini, broccoli, and corn; Simmer another 15 minutes. (add a little more water if needed)
