Stuffed Pasta Shells




Me and my son AJ made two types of shell pasta recipes, one with meat, and mine is one without meat.

Ingredients for meat stuffed shell:
1 lb. large shell pasta ( boil 14 min. drain and rinse, save 14 shells for the no meat pasta.)
In a frying pan, saute and simmer, for 5 to 7 min.: 1/2 lb. hamburger, 1/2 diced med.onion, 2 cloves crushed garlic. Then add, 1/3 cup tomato sauce, a dash of,  Italian seasoning, salt, pepper, garlic and onion powder. Simmer for 10 min. Then set aside

Cheese filling mix: (stir in a separate bowl)
1 cup ricotta cheese
2 egg
1 package Italian shredded cheese
1 extra package Italian shredded cheese (1/2 each used for top of each dish)

Save 1/2 cheese filling for no meat pasta shell dish.

Sauce for meat shells:

In 2 tbsp. olive oil, saute for a few min.1/2 onion, diced and 2 cloves crushed garlic
Add 1/2 lg. can tomato sauce and 1 jar Rague sauce, Italian sausage flavor
Dash of, Italian seasoning, salt, pepper, garlic and onion powder.
Simmer for 10 to15 min. 

Put about a cup, of cooked sauce in bottom of a 9 by 13 baking dish
Stuff shells with a little cheese filling, then meat; place side by side in baking dish.
Pour meat sauce over top of stuffed shells. Then top with 1/2 package of Italian cheese.
Drizzle top with a little olive oil
Bake 350 for 30 minutes



Ingredients without meat:


Sauce:
Simmer for 10 minutes, 1/2 large can tomato sauce, dash salt, pepper, Italian seasoning, garlic and onion powder.
In saved cheese mixture add, 1 cup can spinach (drained well); stir
In the14 reserved cooked shells; fill shells with cheese spinach mixture, pour sauce over and sprinkle top with reserved shredded Italian cheese.
Drizzle top with a little olive oil. Bake 350 for 25 minutes.
