Vegetable Potato Soup


Ingredients:
3 potatoes peeled and chopped
1 stalk celery with top leaves chopped
2 carrots peeled and chopped
3 cloves garlic chopped
1/2 onion chopped
2 bullion cubes
1 teas. grated fresh ginger, Italian seasoning, ranch dressing mix, and parsley 
dash of pepper
2 tbs. olive oil
1/3 cup of evaporated milk 
water 

Recipe:
Saute in oil all ingredients in a pot for 3 to 4 minutes, except water and milk.  Then just cover with water and simmer for about 30 minutes.


Blend soup in blender to make smooth. (Be careful to take out top spout of blender and cover with towel before blending so heat of soup will not shoot out of blender.)





Pour smooth soup back in pot and add evaporated milk and stir.



 Eat and enjoy! So yummy!! :)
