Gourmet Omelet

Ingredients:

1/4 chopped onion

2 med. potatoes- cooked, chopped, and peeled (I cooked in microwave for 6 to 10 minutes)

1 cup sliced fresh mushrooms

1/3 pound chopped ham

5 beaten eggs with dash of hot sauce

2 tbsp oil

2 tbs. butter

salt and pepper to taste

Saute onion, ham, and mushrooms in 1tbs. oil and butter, until tender; then set aside. In separate pan saute chopped cooked potatoes in rest of oil and butter; then add mushrooms and onion mixture. Pour eggs over potato mixture on med. heat. Cook eggs until almost done then flip with large spatula and cook other side. ENJOY!!
