Caldio- Mexican Soup

My Mom made me this soup when I was young. We lived in El Paso Texas. I changed it up a little. It was so good and always made my nose run. So Yummy!


Ingredients:
1 pound stew meat
1/2 diced onion
4 cloves crushed garlic
3 beef bullion cubes
3 diced carrots
1 diced celery
1 or 2 diced potatoes
1 or 2 fresh green chilies (broiled, peeled, with seeds out)
1 can 14 oz. stewed tomatoes (chopped)
1/2 teaspoon of dried oregano, parsley, salt, and pepper
1 bay leaf (optional)



Brown stew meat in 2 tablespoons oil with 1/2 teas. of salt and pepper; then add onions, garlic, and beef bullion cubes; then saute for a few minutes.
Cover with water then simmer for 30 to 45 minutes.



Rub oil on green chilies and broil on cookie sheet for 5 to 7 minutes on both sides. Then cover with plastic. After cooled about 15 minutes, peel off outer skin and take out seeds. Then chop.


Add dried seasoning, carrots, celery, and stewed tomatoes in soup. Simmer for 15 minutes.
Lastly add potatoes and chopped green chilies simmer until potatoes are tender about 15 min. Serve and Enjoy!
