Beth's Potato Salad

                  Me and my family love homemade potato salad! 

 

Ingredients:

8 to 10 boiled and peeled russet potatoes (use any kind you want)

2 stems of celery finely chopped

1/2 med. sweet onion finely chopped

1/4 cup chopped dill pickles

1/4 cup sweet pickle relish

1 tbs. rinsed capers

1 tsp. dill weed and celery seed

1/2 tsp. salt and pepper

1/4 cup any bottled Italian salad dressing

2 tbs salad dressing (I use the whipped kind)

2 tbs. nonfat plain yogurt (I have made it with mayo and sour cream. Use whatever you have on hand.)   

 

Here is my recipe:

Boil potatoes in a large pot, until fork tender, then set aside.

In a large bowl add celery sweet onion, dill pickle, & capers.

Then add sweet pickle relish, dill, celery seed, sea salt & cracked black pepper.

Peal and dice the cooled down potatoes and put in the bowl.

 

Mix and toss with Italian dressing, salad dressing, and nonfat plain yogurt.  I have made it with mayo., and sour cream too, whatever you have on hand.

Then enjoy with some hamburgers & baked beans.

Tip: Add 2 diced boiled eggs if you want to.
