Pinto Beans, Ham, and Cornbread
So Delicious!
Ingredients:
1 1/2 lb. dried pinto beans
water
1 1/2 lb. ham chunks
1/2 med. diced onion
5 cloves crushed garlic
dash pepper
Recipe:
Soak beans over night in a large bowl with water.
Next day, drain and rinse beans.
In a large pot cover beans with water and boil for 10 minutes. Take off heat and let stand for 1 to 2 hours.
Drain and rinse beans; add back to the pot and cover with water; add onion, garlic, ham, and pepper.
Simmer on med. low heat for 4 hours.
Ham can be salty, only add salt if needed.
Easy yummy cornbread!
Ingredients:
2 packets of Texas Style Honey Sweet Cornbread Mix
2 teas. of sugar
cast iron skillet
2 tbs. butter
Recipe:
Follow corn bread recipe on back; add 2 teas. sugar. Mix well.
Use 2 tbs. butter to coat iron skillet.
Set oven at 425, put in buttered cast iron skillet.
When oven is pre-heated, take out hot skillet; then pour in corn bread batter.
Cook for 18 min.
Eat and Enjoy!!
