Taboli Salad
This is one of my favorite dishes!! So Healthy for you!
Ingredients:
1 10oz package taboli salad mix (whole grain bulgur wheat, Bishop Brothers... Bristow, OK. 74010)
1/3 cup oil of your choice; I use both olive oil and vegetable oil.
juice of 4 lemons; about 1/2 cup
1 teas. salt
1/4 teas. black pepper
2 large tomatoes diced
3 scallions, thinly sliced, with half of it's green ends
2 cucumbers seeded and diced
1 cup chopped fresh parsley
water
Recipe:
Put taboli mix, in a large bowl and cover with water. Stir and let set for about 1 hour.
While the mix hydrates, prep all the vegetables and herbs.
Drain off all water; completely off tabouli
Then stir in all other ingredients
Let set in refrigerator for 2 hours or overnight.
Eat and enjoy!
Great as a side, on it's own, or topped with chicken. SO SO Yummy!
2 cups of prepared taboli can be mixed with 4 oz. of cream cheese to make a dip.
