Home Run Grilled Fajitas

My son Aaron calls this Home Run Chicken!
Ingredients:
6 chicken breast
3 tbsp. oil

1/2 teas. salt, pepper, cumin, paprika, garlic, chili, and onion powder
1/2 diced onion
3 cloves crushed garlic
Recipe:
Rinse off chicken, with water, and put in a large bowl.
Then toss chicken with the rest of ingredients, and marinate for 2 hours, or more.
Extras:
flour tortillas
grated cheddar cheese
lite sour cream

Grill marinated chicken, on a charcoal grill for about 10 minutes on both sides.  Let chicken rest for about 10 minutes; then cut into strips.

Flavorful re-fried beans:
Ingredients:
1 can re-fried beans
3 tbsp. of sparky salsa (recipe below)
1 tbsp. sour cream
1/2 cup shredded cheddar cheese

Recipe:
Saute salsa for a few minutes, in a small sauce pan.

Then, add can beans and cook for about 8 minutes.
Set pot off stove and add sour cream and stir.
Sprinkle cheese on top and  dab of salsa.

Sparky Salsa Ingredients:
1 can rotel (drained)
1 clove of a crushed garlic
2 scallions (chopped)
1 tomato (diced)
1  tbsp. pickled diced jalapeno
1/2 juice of a lime
1 teas. sugar
1/2 teas. salt and ground cumin
1 small can (7 oz.) of green tomatillo salsa

Recipe:
In a food processor chop up all ingredients. Eat with chips and on top of your chicken fajita!
Put the grilled chicken in a toasted flour tortilla, with a spread of re-fried beans, a sprinkle of cheddar cheese and a dab of sour cream and hot sauce. YUMM!!
