Pre-heat oven 350*
Ingredients:
1 lb hamburger (can use any cooked meat)
1/2 onion chopped
4 cloves minced garlic
1 packed taco seasoning
1 can cream of chicken soup
1 can enchilada sauce
8 oz. packet of Mexican shredded cheese blend
8 flour tortillas or 12 corn tortillas
1/2 teas. paprika and chili powder
For garnish I used shredded lettuce, diced tomatoes, sour cream, salsa, pickled jalapenos, and lime.
Brown hamburger then drain off fat. Add onion and garlic; saute for 2 to 3 minutes. Then add taco seasoning packet and 3/4 cup water and simmer for about 5 minutes. Break up hamburger into small pieces while cooking.
In a bowl stir together cream of chicken soup, enchilada sauce, paprika, and chili powder.
In a 9 by 12 baking pan, spread some of the sauce in bottom of dish.
In center of tortilla put down the hamburger mixture and sprinkle with shredded cheese.
Roll up and place fold side down in baking dish.
Pour sauce evenly over tortillas and sprinkle with the rest of the cheese.
Bake uncovered for 35 to 45 minutes in oven.
Garnish and devour!!
