Spicy Bell Pepper Sauce
Ingredients:
3 roasted bell peppers (any color), peeled, seeded and chopped
1/2 small onion, roasted coarsely chopped
1 or 2 roasted chilies, (any) I use jalapenos, peeled, seeded and chopped
3 cloves roasted garlic roasted, peeled
1/4 cup red wine vinegar
1 tablespoon honey
1/4 cup olive oil
Directions:
At 400* Roast all peppers, onion, and garlic in oven until tender about 15 to 20 min. Combine (skinless, seeded, and chopped) peppers, onion, garlic, vinegar, honey, and dash of salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. For smoother consistency strain sauce into a bowl.
This sauce is great on grilled veggies, chicken, fish and steak.
