Orange Sauces


Orange Lemon Sauce:
   Ingredients:

  2 tablespoons olive oil
  1/2 medium onion, chopped
  3 cloves garlic, coarsely chopped
  1 cup fresh orange juice
  1 teaspoons grated orange zest
  1 teaspoons grated lemon zest
  1/4 cup fresh lemon juice

  2 tablespoons honey
  2 cups chicken stock
  Salt and freshly ground black pepper
  2 teaspoons dried Italian seasoning (optional)
  2 tablespoons chopped fresh parsley
  1 tablespoons butter

Saute onion and garlic in oil for a 5 minutes, then add everything except parsley and butter; simmer 10 to 15 minutes.  Add butter and parsley to finish.

This is great on fish and chicken.

 Ginger Orange Sauce:
   Ingredients:

  1 tablespoon olive oil
  2 tablespoons peeled and finely grated fresh ginger
  1 teaspoon hot sauce
  1 cups fresh orange juice
  2 tablespoons light brown sugar
  2 tablespoons low-sodium soy sauce
  Juice of 1/2 lime
  1 tablespoons rice vinegar
  1/2 teaspoon grated orange zest
  1/4 teaspoon grated lime zest
  

Heat the oil in a medium saucepan over medium heat. Add the ginger and cook until the ginger is soft, about 2 minutes. Increase heat and add orange juice, brown sugar, soy sauce, hot sauce, and lime juice and cook until the mixture is reduced , stirring occasionally, 8 to 10 minutes. Stir in vinegar and zest to finish.
Great to marinate on fish, chicken and Asian meats

Orange Grapefruit Dressing:
Ingredients:
  1/2 cup fresh orange juice
  1/2 cup fresh grapefruit juice
  2 cloves crushed garlic
  1/2 cup olive oil
  1/2 cup vegetable oil
  3 tbs. honey
  1 tsp. dried Italian dressing and dill (any herbs)
  1 tsp. mustard
  1/2 tsp. salt and pepper

Mix well all together. This is great on all types of salads, and to use for a marinate on meat and veggies.
