Spanish Rice

Ingredients:  1 1/4 cup White long grain rice

1/4 diced onion 

1 clove crushed garlic

1 large chicken bullion cube

1 tsp paprika and cumin

2 tbs.butter and oil

 

In large skillet, brown on (med. heat) rice in oil and butter.

 

Add  diced onion, clove crushed garlic, 1 teas. paprika (makes it red) and cumin.  Saute few min.

 

Add 1 lg. bullion cube (can used beef) and 2 1/2 cups water.

 

Bring to a simmer and cover for 20 to 25 min. Then set off burner for 5  minutes, then fluff with fork.

 

Serve with any of your favorite Mexican food!
