Beth's Yellow Rice



This is my recipe for a great rice side dish that goes with any meal, and  good on its own!

First saute for a few minutes, 1/2 of a diced large onion, 1 large diced carrot, and 1 diced stalk of celery in 3 tbs. oil.  Add a dash of salt and pepper.

Then add and brown 1 1/2 cups long grain rice.

Add1 tsp. turmeric, 1 large chicken bullion cube, and 1 tbs. parsley. Sauté for a few minutes.


Then add 3 1/2 cups of hot water. Simmer covered for 20 minutes.  Set off  heat for 5 to 10 minutes.

Eat with a meal or by itself. I like it with a dash of Teriyaki sauce.
