Family Traditional Christmas Goodies!

Peanut Butter Fudge

These are made in the microwave with chocolate chips.  They will melt into your mouth!
12 oz. package peanut butter chips or chocolate

1  can sweetened condensed milk  14 oz.
1 cup peanut butter (smooth or chunky)

Place all ingredients  in a microwave safe bowl.  Stir well.

Microwave  for 1 to 3 minutes until all melted.  Stir once or twice during cooking.
Stir well.
Pour in 8x8 greased dish
Refrigerate until set.  It will take about 2 hours.

Then cut into small squares. This freezes well.

 

Hay Stacks

My Mom has made these for years!
12 oz package butterscotch chips
1 can chow mein noodles 5 to 6 oz
1 cup salted cashews  (optional)

In microwave, melt butterscotch chips for 1 min, then stir. Microwave for another 30 to 45 seconds;  stir until smooth.
Add chow mein noodles; stir with fork until well blended.
 Spray non-stick spray cookie sheet. Drop tabs. with fork

Put in refrigerator until hardened. 
I put in freezer bag until I want to give for gifts, or eat them right away. Enjoy!

 

Easy Party Snack Mix

I have mixed and matched these ingredients.  This is so easy!  No cooking involved!  You can always add what you like or take away what you don't!  Great for gifts!

1 box Cheez-It  crackers
1 bag mini pretzels
1 box wheat thins
1 lg. bag chocolate stars or m&m's
1 box mini nutter butter bites cookies
1/2 box Frosted mini wheat little bites
1 box Teddy grahams (any flavor)
Mix all in a bowl
I put the mix in baggies as gifts, or take it to a party!!

 

Candied Strawberries

This is my sisters favorite!!
2  3 oz. packages of strawberry jello

1 cup ground pecans
1 cup ground coconut
3/4 cup sweetened condensed milk
1/2 teas. vanilla extract
Red sugar sprinkles
slivered almonds
green food coloring
Recipe:
Put slivered almonds in a bowl and add a few drops of food coloring, stir.
Set aside (these will be the strawberry stems)
Mix all other ingredients together and chill for 1 hour.
Take 1 tabs. of mixture and shape into a strawberry
Roll into red sugar sprinkles
Put 2  green slivered almonds on top of  strawberries for the stem.
Eat'em Up!

 

Snow Ball Melt Away Cookies

These where my favorite!
1/2 cup powdered sugar
1/2 cup minced pecans
2  1/2 cup flour
1 cup butter; simmer until lightly browned (then cool)

1 teas. vanilla
Mix all together;  then chill
Then form into 1 tabs. size balls (dough will be crumbly at first)

Place on cookie sheet
Bake 350* for 20 min.
When still warm roll in powdered sugar
Set aside and eat!
They will melt in your mouth!  So delicious!

 

Easy Gingerbread Man

These are so good!  I have made these for my kids for years.

Ingredients:
1 Package spice cake mix
1/2 cup flour
1 teas. powdered ginger
1 teas. cinnamon
2 large eggs
1/3 cup of oil and dark molasses
Mix all ingredients and refrigerate for 2 hours
Roll out dough 1/4 inch thick on a floured surface
Cut out with ginger bread man cookie cutter
Place on cookie sheet  (spray with cooking spray)
Bake 350* for 7 to 10 min.
cool on cookie sheet for 3 to 5 minutes
Then place on wire rack; cool completely
Icing:
Stir together 1  1/2 cup powdered sugar and 5 teas. water or lemon juice
Ice cookies and decorate as you like!  They freeze well.

 

Cream Cheese Coffee Cake

This is my Moms recipe!  This is my favorite!!  I eat until I get sick!

This makes two coffee cakes.
2 loaves  Rhodes frozen white bread (I defrost over night in refrigerator)
1 8 oz. packages 1/3 less fat cream cheese
1  4 oz. packages 1/3 less fat cream cheese
1 cup brown sugar
Cinnamon
1 beaten egg with a splash of water (this egg wash will be brushed on top before baking)
Recipe:
On a floured surface roll out bread dough, as much as you can in a round circle.
Spread half of cream cheese over dough.
Sprinkle with half of brown sugar
Sprinkle liberally with cinnamon
Starting at edge, roll up
In a buttered pie pan place rolled dough in a coil in pan
Brush with egg wash
Bake 350* for 30 to 40 minutes.
Let cool put spread on icing then devour! This is so so good!
Icing for top:Mix together 2 tbsp. softened butter, 1/2 teas. vanilla,  1 tbsp. milk, and 1 cup powdered sugar. Then stir in 1/2 cup chopped pecans.
