Homemade Chicken Vegetable Soup


Ingredients:
1 whole raw chicken
4 peeled and diced carrots
1/2 sweet onion diced
2 celery stalks diced
2 cups chopped fresh green beans
2 large bullion cubes
1 13 oz. can fire roasted tomatoes (for spicy)/ or stewed tomatoes (puree in food processor)
1 teas. garlic powder, onion powder, Italian dried seasoning, salt, pepper and 1 bay leaf
3/4 cup white rice
2 peeled and diced potatoes (optional)
1 cup can or fresh corn

Recipe:
Rinse chicken well; cut off any extra fat and skin off raw chicken
Put chicken in large pot and cover with water
Add salt, garlic powder, onion powder, and pepper
Simmer chicken covered for 45 min. to an hour.


Take out and let cool on a plate
With a large spoon skim off extra fat from broth
Add vegetables, stewed tomatoes, bullion cubes and the rest of seasonings. Don't add rice, potatoes and corn yet.
Simmer for 10 minutes


Then add rice stir, and simmer another 10 minutes.


Then add potatoes and corn; cook for another 15 minutes.
Tear meat off cooled cooked chicken.
Take soup off heat and add as much shredded cooked chicken you desire.


Eat and enjoy!
 I save or freeze half of the chicken for another meal later in the week.
