Pork Fried Rice

                                       This is so good!


Ingredients:
1 lb. marinated pork (chopped in small pieces)
3 cups steamed rice
3 scrambled eggs
1 cup frozen peas
4 chopped scallions
4 tbs. oil

Pork marinate: (marinate pork for 2 hours or over night)
3 tbs. lite low salt soy sauce
2 tbs. Italian dressing (I used out of a jar)
2 tbs. lemon juice
1tbs. grated fresh ginger
2 crushed garlic cloves
1 tbs of hot sauce
1 tbs.honey

                                         Marinate meat
Steam rice. I have a rice steamer. It is a easy way to cook rice!


Stir fry meat and 2 tbs. oil in skillet and cook well until all moisture is gone and it browns and set aside.


Defrost peas in hot water and set aside.


Scramble eggs in separate skillet and set aside.


Chop scallions finely.


Stir fry steamed rice for a few minutes in 2 tbs. oil and in the pan juices from the meat you cooked.


Then put all ingredients together and stir fry together for a few minutes.



Eat and enjoy!! Have with some egg rolls!
